How to Make Grilled Bacon Wrapped Chicken Skewers

Preheat the grill: Heat your grill to medium-high heat (about 375°F / 190°C) and oil the grates to prevent sticking.

Prepare the filling: In a bowl, mix the softened cream cheese, shredded cheese, garlic powder, onion powder, smoked paprika, pepper, and salt.

Prepare the chicken: Lay each chicken breast flat and spread an even layer of the cheese mixture over each piece.

Roll the chicken: Starting at the narrow end, tightly roll each chicken breast. Wrap each roll with 2-3 slices of bacon, completely covering the chicken.

Thread the bacon-wrapped chicken onto the wood skewers.

Brush with olive oil: Lightly brush the roulades with olive oil to help with grilling and crisping the bacon.
